Effies Oat Biscuits with GINGER
I fell in love with the oatcakes about ten years ago. Could they get better? Ummm maybe. I found these oatcakes with ginger, and I hear a siren song from my shelves every day when I come in. Serve with cheeses; your board will be brilliant. If there's any leftover, they are also grand on their own with tea or coffee.
Thank goodness for Grandma's. In Nova Scotia, where the original biscuit was known as an oatcake, Effie MacLellan (yes, that Effie) learned a generations-old, family farmhouse recipe that she carried to her new home in Dorchester, Massachusetts. It will be oatcakes to me always. Few flavors are as bright and distinctive as ginger. So this new recipe delivers a bold ginger zing but tames it with just a touch of sweetness. Ginger biscuits brilliantly complement lemon or orange curd, buttery brie, or mascarpone, making an excellent snack with tea or lemonade.
